Job Description
SUMMARY
Executive Chef is responsible for food production, develop menus, food purchase specifications and recipes and
supervise staffs. Also responsible for developing and monitoring food and labor budget for the department.
Maintaining highest professional food quality and sanitation standards.
ROLE AND RESPONSIBILITIES
Develop food menu according to client requirement.
Schedules and coordinates the work of assistant chefs, cooks and other kitchen employees to assure that
food preparation is economical and technically correct and within budgeted labor cost goals.
Approves the requisition of products and other necessary food supplies.
Ensures that high standards of sanitation, cleanliness and safety are maintained throughout all kitchen
areas at all times.
Safeguards all food preparation employees by implementing training to increase their knowledge about
safety, sanitation and accident prevention principles.
Develops standard recipes and techniques for food preparation and presentation which help to assure
consistently high quality and to minimize food costs; exercises portion control for all items served and
assists in establishing menu selling prices.
Directly supervises the cooking of items that require skillful preparation.
Ensures proper staffing for maximum productivity and high standards of quality; controls food and payroll
costs to achieve maximum profitability.
Evaluates food products to assure that quality standards are consistently attained.
Establishes and maintains a regular cleaning and maintenance schedule for all kitchen areas and
equipment.
Overseeing the operational requirements and demands of the department, direct involvement with
Service Delivery Line supervisor.
Provides training and professional development opportunities for all kitchen staff.

REQUIREMENTS
The requirements listed below are representative of the knowledge, skill, and/or ability required:
Educational requirement is relevant college graduate degree.
Minimum 4 years of experience in hospitality industry within UAE/GCC.
Knowledge of food cuisines in MENA region.
Fine dining experience required.
Good knowledge on hygiene and sanitation practice according to GHP and HACCP.
Ability to work under pressure
Must be bilingual - Arabic and English.
Maximum age of 30 years.
Must be UAE driving license holder.
